- 4 boneless, skinless chicken breasts
- 1 cup fresh button or cremini mushrooms, sliced
- 4 slices crispy bacon
- 1 cup Swiss cheese, sliced
- 1/2 cup honey mustard
- 2 cloves garlic, minced
- Fresh rosemary or thyme, for garnish
- Salt and black pepper, to taste
- Butter, for sautéing mushrooms
Instructions
- In a bowl, mix honey mustard, minced garlic, salt, and pepper. Add the chicken and coat thoroughly. Marinate for at least 30 minutes.
- In a skillet, fry the bacon until crispy. Remove and reserve drippings.
- In the same skillet, add butter if needed and sauté sliced mushrooms until golden brown, about 5-7 minutes.
- Add marinated chicken to the skillet and cook over medium heat for 6-8 minutes per side or until cooked through.
- Top each chicken piece with sautéed mushrooms, crispy bacon, and a slice of cheese. Cover to melt cheese, about 3-4 minutes.
- Transfer to plates, drizzle with remaining marinade, and garnish with fresh herbs.
