Ingredients

- 4 cups fresh arugula
- 2 medium apples (Honeycrisp or Fuji)
- 1/2 cup toasted walnuts or pecans
- 1/4 cup feta or goat cheese (optional)
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
Instructions
- Wash the arugula thoroughly and slice the apples into thin wedges.
- Toast the nuts in a dry skillet until fragrant.
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, and Dijon mustard to make the dressing.
- In a large bowl, combine arugula, apples, and toasted nuts. Drizzle dressing over and toss gently.
- Transfer to a serving platter and sprinkle with cheese if desired.
