Description

Ingredients

  • 2 medium apples (Honeycrisp or Fuji)
  • 1/2 cup toasted walnuts or pecans
  • 1/4 cup feta or goat cheese (optional)
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard

Instructions

  1. Wash the arugula thoroughly and slice the apples into thin wedges.
  2. Toast the nuts in a dry skillet until fragrant.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, honey, and Dijon mustard to make the dressing.
  4. In a large bowl, combine arugula, apples, and toasted nuts. Drizzle dressing over and toss gently.
  5. Transfer to a serving platter and sprinkle with cheese if desired.
