Ingredients

Scale
  • 4 cups baby spinach and arugula mix
  • 2 crisp apples (e.g., Honeycrisp or Granny Smith), sliced
  • 1 cup dried cranberries
  • 1/2 cup walnuts, chopped and toasted
  • 4 oz goat cheese, crumbled
  • 1/2 red onion, thinly sliced

Instructions

  1. Wash and dry the greens thoroughly.
  2. Slice the apples into thin wedges and toss with lemon juice.
  3. Chop and toast the walnuts in a skillet over medium heat for 5-7 minutes.
  4. In a large bowl, combine the greens, apple slices, cranberries, red onion, and walnuts.
  5. In a separate bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
