- 4 cups baby spinach and arugula mix
- 2 crisp apples (e.g., Honeycrisp or Granny Smith), sliced
- 1 cup dried cranberries
- 1/2 cup walnuts, chopped and toasted
- 4 oz goat cheese, crumbled
- 1/2 red onion, thinly sliced
- 1/4 cup extra virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Wash and dry the greens thoroughly.
- Slice the apples into thin wedges and toss with lemon juice.
- Chop and toast the walnuts in a skillet over medium heat for 5-7 minutes.
- In a large bowl, combine the greens, apple slices, cranberries, red onion, and walnuts.
