Delicious and wholesome Baked Apple Cinnamon Oatmeal Cups filled with the warm flavors of apples and cinnamon, perfect for breakfast, snacks, or as a dessert.

- 2 cups rolled oats
- 1 teaspoon ground cinnamon
- Pinch of salt
- 2 cups milk (dairy, oat, or almond)
- 1 large egg
- 1/4 cup maple syrup or honey
- 2 large apples (chopped, leaving the skin on)
Instructions
- Preheat your oven to 350°F (175°C) and grease a cupcake pan or line it with paper liners.
- In a large bowl, mix together the rolled oats, ground cinnamon, and salt.
- In another bowl, whisk together the milk, egg, and maple syrup or honey until combined.
- Chop the apples and fold them gently into the dry mixture. Pour the wet mixture over and stir until moistened.
- Spoon the mixture into the prepared cupcake pan, filling each cup about 3/4 full.
- Bake for 25-30 minutes until golden and a toothpick comes out clean.
- Allow to cool for a few minutes before removing the cups.
Notes
For added texture, consider stirring in some raisins or nuts. You can substitute eggs with ground flaxseeds for a vegan version.
