Delicious and wholesome Baked Apple Cinnamon Oatmeal Cups filled with the warm flavors of apples and cinnamon, perfect for breakfast, snacks, or as a dessert.


Ingredients

  • 2 cups rolled oats
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 2 cups milk (dairy, oat, or almond)
  • 1 large egg
  • 1/4 cup maple syrup or honey
  • 2 large apples (chopped, leaving the skin on)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a cupcake pan or line it with paper liners.
  2. In a large bowl, mix together the rolled oats, ground cinnamon, and salt.
  3. In another bowl, whisk together the milk, egg, and maple syrup or honey until combined.
  4. Chop the apples and fold them gently into the dry mixture. Pour the wet mixture over and stir until moistened.
  5. Spoon the mixture into the prepared cupcake pan, filling each cup about 3/4 full.
  6. Bake for 25-30 minutes until golden and a toothpick comes out clean.
  7. Allow to cool for a few minutes before removing the cups.

Notes

For added texture, consider stirring in some raisins or nuts. You can substitute eggs with ground flaxseeds for a vegan version.
