A healthier twist on the classic apple fritters, baked to perfection with warm, spiced apple filling.

- 2 cups fresh apples (preferably Granny Smith or Honeycrisp), diced
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup Greek yogurt or milk
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the flour, baking powder, cinnamon, nutmeg, and brown sugar. Whisk together until well-blended.
- In a separate bowl, whisk the eggs, yogurt (or milk), and vanilla until smooth. Fold in the diced apples.
- Gently combine the wet ingredients with the dry ingredients until just mixed; a few lumps are fine.
- Drop mounds of batter onto the prepared baking sheet, leaving space between them.
- Bake for 20–25 minutes, or until golden brown and a toothpick inserted comes out clean.
- Allow cooling slightly before dusting with powdered sugar or drizzling with glaze.
Notes
Keep an eye on the fritters while baking to get them just right, as ovens can vary.
