Description

A healthier twist on the classic apple fritters, baked to perfection with warm, spiced apple filling.


Ingredients

  • 2 cups fresh apples (preferably Granny Smith or Honeycrisp), diced
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup Greek yogurt or milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, baking powder, cinnamon, nutmeg, and brown sugar. Whisk together until well-blended.
  3. In a separate bowl, whisk the eggs, yogurt (or milk), and vanilla until smooth. Fold in the diced apples.
  4. Gently combine the wet ingredients with the dry ingredients until just mixed; a few lumps are fine.
  5. Drop mounds of batter onto the prepared baking sheet, leaving space between them.
  6. Bake for 20–25 minutes, or until golden brown and a toothpick inserted comes out clean.
  7. Allow cooling slightly before dusting with powdered sugar or drizzling with glaze.
