  • 1 tsp Onion Powder
  • Salt and Pepper, to taste
  • Fresh Herbs (such as parsley, basil, or chives)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by steaming or boiling until fork-tender, then drain and cool slightly.
  3. Grate the zucchini using a box grater and squeeze out excess moisture.
  4. Mash the cooled sweet potato and mix in the grated zucchini.
  5. Add breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper to the mixture.
  6. Form the mixture into small oval shapes and place them on a lined baking sheet.
  7. Bake for 25-30 minutes, flipping halfway through for even cooking.
