- 1 medium Zucchini, grated and excess moisture removed
- 1 cup Bread Crumbs (fresh or seasoned)
- 2 large Eggs (or flaxseed meal for vegan option)
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- Salt and Pepper, to taste
- Fresh Herbs (such as parsley, basil, or chives)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the sweet potatoes by steaming or boiling until fork-tender, then drain and cool slightly.
- Grate the zucchini using a box grater and squeeze out excess moisture.
- Mash the cooled sweet potato and mix in the grated zucchini.
- Add breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper to the mixture.
- Form the mixture into small oval shapes and place them on a lined baking sheet.
- Bake for 25-30 minutes, flipping halfway through for even cooking.
- Serve warm with your favorite dips.
