- 1 lb boneless chicken thighs or breasts
- 2–3 chipotle peppers in adobo sauce, minced
- 2 tbsp fresh lime juice
- 2 tbsp extra-virgin olive oil
- 4 cloves fresh garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- Fresh cilantro, for garnish
Instructions
- Marinate the chicken: In a mixing bowl, combine diced chicken with minced chipotle peppers, adobo sauce, lime juice, olive oil, minced garlic, and the spices. Cover and let marinate for at least 30 minutes.
- Heat the skillet: In a large skillet over medium heat, drizzle in a bit of olive oil.
- Cook the chicken: Add the marinated chicken to the hot skillet in a single layer. Sauté for about 5-6 minutes, turning until golden.
- Rest & slice: Remove from heat and let the chicken rest for a minute before slicing into strips.
- Serve & enjoy: Garnish with freshly chopped cilantro and a squeeze of lime before serving!
Notes
Marinating for a few hours or overnight enhances flavor. Use a meat thermometer to ensure chicken is cooked through.
