Ingredients

  • 23 chipotle peppers in adobo sauce, minced
  • 2 tbsp fresh lime juice
  • 2 tbsp extra-virgin olive oil
  • 4 cloves fresh garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • Fresh cilantro, for garnish

Instructions

  1. Marinate the chicken: In a mixing bowl, combine diced chicken with minced chipotle peppers, adobo sauce, lime juice, olive oil, minced garlic, and the spices. Cover and let marinate for at least 30 minutes.

  3. Cook the chicken: Add the marinated chicken to the hot skillet in a single layer. Sauté for about 5-6 minutes, turning until golden.
