Deliciously soft and chocolatey mini muffins that are perfect for sharing with family and friends.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup buttermilk
- 1/4 cup melted butter
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
- Combine the dry ingredients: flour, cocoa powder, baking powder, baking soda, granulated sugar, brown sugar, and salt in a large bowl.
- Whisk together the wet ingredients: eggs, buttermilk, and melted butter in another bowl.
- Pour the wet ingredients into the dry ingredients and gently fold with a spatula.
- Add in the chocolate chips and mix until well distributed.
- Spoon the batter into the mini muffin tin, filling each cup about 2/3 full.
- Bake for about 10–12 minutes or until a toothpick comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.
Notes
For a healthier version, incorporate whole wheat flour or reduce the sugar. These muffins freeze well!
