Description

Deliciously soft and chocolatey mini muffins that are perfect for sharing with family and friends.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/4 cup melted butter
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. Combine the dry ingredients: flour, cocoa powder, baking powder, baking soda, granulated sugar, brown sugar, and salt in a large bowl.
  3. Whisk together the wet ingredients: eggs, buttermilk, and melted butter in another bowl.
  4. Pour the wet ingredients into the dry ingredients and gently fold with a spatula.
  5. Add in the chocolate chips and mix until well distributed.
  6. Spoon the batter into the mini muffin tin, filling each cup about 2/3 full.
  7. Bake for about 10–12 minutes or until a toothpick comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Notes

For a healthier version, incorporate whole wheat flour or reduce the sugar. These muffins freeze well!
