- 1/2 cup cocoa powder
- 4 large eggs
- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup whipping cream
- 1 cup chopped cherries (fresh or jarred)
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a mixing bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, beat the eggs and granulated sugar together until the mixture is pale and thick.
- Gradually add the dry ingredients to the wet mixture, folding gently until combined.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
- Prepare a clean kitchen towel, and dust it with powdered sugar.
- Once the cake is done, invert it onto the towel and peel off the parchment paper. Roll the cake up from one end, starting with the towel, and let it cool.
- Meanwhile, whip the cream until stiff peaks form. Fold in chopped cherries.
- When the cake has cooled completely, unroll it gently, spread the whipped cream mixture, and roll it back up without the towel this time.
- Dust the top with more powdered sugar and garnish with additional cherries if desired.
