- 8 oz fusilli or farfalle pasta
- 4 tbsp butter
- 2 cloves garlic, minced
- 1 cup freshly grated parmesan cheese
- 1 tsp freshly cracked black pepper
- Fresh herbs (basil or parsley)
Instructions
- Cook the pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve a cup of pasta water, then drain.
- Sauté the garlic: In a large skillet, melt the butter over medium heat. Add minced garlic and sauté until it’s just golden and fragrant—but be careful not to let it burn!
- Combine: Add the drained pasta to the skillet, tossing it in the garlic butter. Sprinkle generously with cracked black pepper.
- Add parmesan: Gradually stir in the grated parmesan while tossing the pasta. If it looks a bit dry, add reserved pasta water a splash at a time until you achieve a creamy consistency.
- Season: Taste and adjust seasoning. Add more black pepper or a pinch of salt if you like.
- Garnish: Top with fresh herbs and an extra sprinkle of parmesan before serving.
Notes
For a vibrant presentation, serve in a large bowl and garnish with arugula or cherry tomatoes.
