Ingredients

  • 1 cup active sourdough starter
  • 2 cups all-purpose flour
  • 1 cup lukewarm water
  • 1 teaspoon salt
  • 1 cup freshly grated Parmesan cheese
  • 1 tablespoon freshly cracked black pepper
  • 2 tablespoons olive oil

Instructions

  1. Mix the sourdough starter, flour, lukewarm water, and salt in a large bowl until a shaggy dough forms. Let it sit for 30 minutes.
  2. Add the Parmesan cheese and black pepper, and knead the dough for 8-10 minutes until smooth and elastic.
  3. Place the dough in a greased bowl, cover it, and let it rise in a warm spot for 4-6 hours or until doubled in size.
  4. Once risen, punch it down and divide it into 2-4 equal pieces, rolling each into a ball. Let them rest for another 30 minutes.
  5. Flatten each ball into rounds about ¼ inch thick on a floured surface.
  6. Heat a skillet over medium-high heat with a drizzle of olive oil. Cook each flatbread for 2-3 minutes on both sides until golden and crispy.
  7. Sprinkle with extra Parmesan and black pepper while warm before serving.

Notes

Ensure your skillet is hot enough to create a nice crust. You can also experiment with toppings or serve with dips.
