- 1 cup active sourdough starter
- 2 cups all-purpose flour
- 1 cup lukewarm water
- 1 teaspoon salt
- 1 cup freshly grated Parmesan cheese
- 1 tablespoon freshly cracked black pepper
- 2 tablespoons olive oil
Instructions
- Mix the sourdough starter, flour, lukewarm water, and salt in a large bowl until a shaggy dough forms. Let it sit for 30 minutes.
- Add the Parmesan cheese and black pepper, and knead the dough for 8-10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover it, and let it rise in a warm spot for 4-6 hours or until doubled in size.
- Once risen, punch it down and divide it into 2-4 equal pieces, rolling each into a ball. Let them rest for another 30 minutes.
- Flatten each ball into rounds about ¼ inch thick on a floured surface.
- Heat a skillet over medium-high heat with a drizzle of olive oil. Cook each flatbread for 2-3 minutes on both sides until golden and crispy.
- Sprinkle with extra Parmesan and black pepper while warm before serving.
Notes
Ensure your skillet is hot enough to create a nice crust. You can also experiment with toppings or serve with dips.
