- 3 Blood oranges (zest and juice)
- 1/2 cup Extra virgin olive oil
- 1 cup Granulated sugar
- 3 Large eggs
- 1 1/2 cups All-purpose flour
- 2 tsp Baking powder
- 1 tsp Ground cardamom
- 1/2 tsp Salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it with olive oil and lining the bottom with parchment paper.
- Whisk together the flour, baking powder, ground cardamom, and salt in a bowl. Set aside.
- Combine the granulated sugar and blood orange zest in another mixing bowl. Rub the zest into the sugar using your fingers.
- Add in the eggs and whisk until the mixture is light and frothy.
- Slowly drizzle in the olive oil while continuously whisking. Then mix in the blood orange juice until fully incorporated.
- Fold in the dry ingredients until just combined; do not overmix.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For added flair, drizzle a simple glaze made of powdered sugar and blood orange juice over the top once cooled.
