Description

A moist and tender cake infused with the vibrant flavors of blood oranges and the warm spice of cardamom, making it a perfect dessert for gatherings.


Ingredients

  • 3 Blood oranges (zest and juice)
  • 1/2 cup Extra virgin olive oil
  • 1 cup Granulated sugar
  • 3 Large eggs
  • 1 1/2 cups All-purpose flour
  • 2 tsp Baking powder
  • 1 tsp Ground cardamom
  • 1/2 tsp Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9-inch round cake pan by greasing it with olive oil and lining the bottom with parchment paper.
  2. Whisk together the flour, baking powder, ground cardamom, and salt in a bowl. Set aside.
  3. Combine the granulated sugar and blood orange zest in another mixing bowl. Rub the zest into the sugar using your fingers.
  4. Add in the eggs and whisk until the mixture is light and frothy.
  5. Slowly drizzle in the olive oil while continuously whisking. Then mix in the blood orange juice until fully incorporated.
  6. Fold in the dry ingredients until just combined; do not overmix.
  7. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For added flair, drizzle a simple glaze made of powdered sugar and blood orange juice over the top once cooled.
