Description

Delicious meatballs infused with South African bobotie spices, served with fluffy couscous.


Ingredients

  • 1 lb ground beef (or ground turkey/chicken)
  • 1/2 cup breadcrumbs (gluten-free if desired)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp curry powder
  • 1/2 tsp turmeric
  • 1/2 tsp coriander
  • 1/2 cup dried apricots or raisins, chopped
  • 1/4 cup coconut milk (or heavy cream)
  • 1/4 cup chutney (preferably mango)
  • 1 egg (or flaxseed meal mixed with water)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground meat, breadcrumbs, onion, garlic, and spices in a bowl.
  3. Add the dried fruits and chutney, followed by a whisked egg or flaxseed mixture.
  4. Shape the mixture into meatballs and place them on a baking sheet lined with parchment paper.
  5. Bake for 20–25 minutes until browned and cooked through.
  6. Serve with couscous or rice.

Notes

For a crispier exterior, broil the meatballs for an additional minute after baking.
