Delicious meatballs infused with South African bobotie spices, served with fluffy couscous.
Ingredients

- 1 lb ground beef (or ground turkey/chicken)
- 1/2 cup breadcrumbs (gluten-free if desired)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp curry powder
- 1/2 tsp turmeric
- 1/2 tsp coriander
- 1/2 cup dried apricots or raisins, chopped
- 1/4 cup coconut milk (or heavy cream)
- 1/4 cup chutney (preferably mango)
- 1 egg (or flaxseed meal mixed with water)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the ground meat, breadcrumbs, onion, garlic, and spices in a bowl.
- Add the dried fruits and chutney, followed by a whisked egg or flaxseed mixture.
- Shape the mixture into meatballs and place them on a baking sheet lined with parchment paper.
- Bake for 20–25 minutes until browned and cooked through.
- Serve with couscous or rice.
Notes
For a crispier exterior, broil the meatballs for an additional minute after baking.
