- 6 large eggs
- 1 cup spinach, chopped
- 1 cup bell peppers, diced
- 1 cup zucchini, diced
- 1 cup mushrooms, sliced
- 1 cup cheese (cheddar, feta, or mozzarella)
- 1/2 cup milk or cream
- Salt and pepper to taste
- 1 tsp thyme, fresh
- 1 tsp paprika
- 1 tbsp olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté your vegetables in a skillet with olive oil until soft.
- Whisk together the eggs, milk, salt, and pepper in a bowl.
- Combine sautéed vegetables in a greased baking dish and pour the egg mixture over them.
- Sprinkle cheese on top before baking.
- Bake for 30-40 minutes or until eggs are set and top is golden brown.
- Let it rest for 5 minutes before slicing.
- Serve warm, garnished with fresh herbs.
