- 2 cups cooked and shredded chicken
- 8 oz cream cheese, softened
- 1/2 cup Buffalo sauce
- 1 cup sharp cheddar cheese, shredded
- 1/4 cup green onions, chopped
- 10 egg roll wrappers
- Oil for frying
Instructions
- Shred the cooked chicken and place in a mixing bowl.
- Mix together the shredded chicken, cream cheese, Buffalo sauce, cheddar cheese, and green onions until well blended.
- Lay an egg roll wrapper in a diamond shape and place about 2 tablespoons of the filling near the bottom corner.
- Roll tightly and seal the edges with water.
- Heat oil in a skillet over medium heat and carefully fry the egg rolls seam-side down for 3-4 minutes per side until golden brown.
- Drain on paper towels and serve hot with dipping sauce.
Notes
For healthier options, use lean chicken and light cream cheese. Great leftovers that can be reheated in the oven.
