- 3 large eggs
- 3/4 cup granulated sugar
- 1 cup heavy cream

Instructions
- Preheat your oven to 400°F (200°C) and line a springform pan with parchment paper.
- Mix the batter: In a large mixing bowl, combine cream cheese and sugar; beat until smooth. Mix in the eggs one by one, then stir in heavy cream and vanilla until just combined. Add a pinch of salt.
- Pour the batter into your prepared pan and bake for about 50-60 minutes until the top is dark and cracked.
- Remove it from the oven and allow it to cool completely in the pan.
- Chill in the refrigerator for at least 4 hours or overnight.
- Serve by gently removing from the pan, peeling off the parchment, and adding optional whipped cream or berries.
Notes
Be careful not to overbake; the center should jiggle slightly when done. Let cool completely before chilling.
