Instructions
- Soak the butterfly pea flowers in hot water for about 10 minutes to release the blue color and essence.
- Strain the mixture to extract the vibrant blue liquid and discard the flowers.
- In a saucepan, mix the coconut milk with the blue liquid, sweetener, and vanilla extract.
- In a small bowl, create a slurry by mixing cornstarch with a few tablespoons of the coconut mixture.
- Add the slurry back into the saucepan and stir continuously over medium heat until thickened, about 5-7 minutes.
- Remove from heat, pour into serving bowls, and allow to cool before refrigerating for about 2 hours to set.
- Garnish with fresh fruits or nuts before serving.
