Instructions

  1. Soak the butterfly pea flowers in hot water for about 10 minutes to release the blue color and essence.
  2. Strain the mixture to extract the vibrant blue liquid and discard the flowers.
  3. In a saucepan, mix the coconut milk with the blue liquid, sweetener, and vanilla extract.
  4. In a small bowl, create a slurry by mixing cornstarch with a few tablespoons of the coconut mixture.
  5. Add the slurry back into the saucepan and stir continuously over medium heat until thickened, about 5-7 minutes.
  6. Remove from heat, pour into serving bowls, and allow to cool before refrigerating for about 2 hours to set.
