- 8 oz elbow macaroni
- 1 lb Andouille sausage, sliced
- 3 cups grated sharp cheddar cheese
- 1 cup grated pepper jack cheese
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 teaspoon Cajun seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley or chives for garnish
- Optional: sautéed mushrooms, onions, or bell peppers
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente, drain, and set aside.
- In a large skillet, melt butter over medium heat. Stir in flour and whisk for 1-2 minutes until golden brown.
- Gradually whisk in milk and cream, bringing to a simmer until thickened.
- Add cheddar and pepper jack cheese, stirring until melted and combined. Season with Cajun seasoning, garlic powder, salt, and pepper.
- In another pan, sauté sliced Andouille sausage until browned. Optionally add other veggies.
- Combine the cooked pasta with the cheese sauce and sausage. Add reserved pasta water for desired creaminess.
- For a baked finish, transfer to a greased baking dish, top with cheese and breadcrumbs, and bake at 350°F for 20-25 minutes until bubbly and golden.
- Garnish with fresh herbs and serve hot.
Notes
You can use gluten-free pasta for dietary needs. Adjust spice levels as necessary to suit your taste.
