Ingredients

  • 8 oz elbow macaroni
  • 1 lb Andouille sausage, sliced
  • 3 cups grated sharp cheddar cheese
  • 1 cup grated pepper jack cheese
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley or chives for garnish
  • Optional: sautéed mushrooms, onions, or bell peppers

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, drain, and set aside.
  2. In a large skillet, melt butter over medium heat. Stir in flour and whisk for 1-2 minutes until golden brown.
  3. Gradually whisk in milk and cream, bringing to a simmer until thickened.
  4. Add cheddar and pepper jack cheese, stirring until melted and combined. Season with Cajun seasoning, garlic powder, salt, and pepper.
  5. In another pan, sauté sliced Andouille sausage until browned. Optionally add other veggies.
  6. Combine the cooked pasta with the cheese sauce and sausage. Add reserved pasta water for desired creaminess.
  7. For a baked finish, transfer to a greased baking dish, top with cheese and breadcrumbs, and bake at 350°F for 20-25 minutes until bubbly and golden.
  8. Garnish with fresh herbs and serve hot.

Notes

You can use gluten-free pasta for dietary needs. Adjust spice levels as necessary to suit your taste.
