Ingredients

  • 3 lbs chuck roast
  • 3 large sweet yellow or Vidalia onions, sliced
  • 1 cup beef broth
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 2 bay leaves
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • 1/2 cup red wine (optional, or additional beef broth)

Instructions

  1. Heat 2 tablespoons of olive oil or butter in a large skillet over medium heat. Add sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until deep golden brown, about 20-30 minutes.
  2. Season the chuck roast with salt and pepper. Sear in a pot over medium-high heat until browned on all sides.
  3. Remove the roast and deglaze the pot with red wine, scraping up any bits stuck to the pan.
  4. Return the roast to the pot. Layer with caramelized onions, garlic, and herbs. Pour in beef broth until the roast is mostly submerged. Simmer gently.
  5. Cover and cook in a preheated oven at 300°F for 3-4 hours until fork-tender.
  6. Serve shredded or whole, surrounded by caramelized onions and broth.

Notes

Allow the pot roast to rest for about 20 minutes before slicing to retain juices.
