Ingredients

  • Pasta (fettuccine or pappardelle)
  • Leeks, sliced
  • Mushrooms (cremini and shiitake), sliced
  • Gruyere cheese, shredded
  • Garlic, minced
  • Fresh thyme
  • Olive oil
  • Butter
  • Salt
  • Pepper

Instructions

  1. Prepare the Ingredients: Clean and slice the leeks and mushrooms. Mince the garlic and prepare the herbs.
  2. Cook the Pasta: Boil salted water and cook pasta until al dente. Reserve some pasta water before draining.
  3. Sauté the Mushrooms: Heat olive oil and butter in a skillet. Add mushrooms and sauté until golden brown, about 5-7 minutes. Season.
  4. Caramelize the Leeks: Add leeks to the skillet and cook until tender and caramelized, about 10 minutes. Adjust heat if necessary.
  5. Add the Garlic and Herbs: Stir in the minced garlic and thyme, cooking for an additional 2 minutes.
  6. Combine with Pasta: Add the drained pasta and reserved water to the skillet. Stir in Gruyere cheese until melted.
  7. Adjust the Seasoning: Taste and add more salt, pepper, or herbs as desired.
  8. Serve: Plate and garnish with extra cheese and thyme. Enjoy warm!
