Ingredients
- Pasta (fettuccine or pappardelle)
- Leeks, sliced
- Mushrooms (cremini and shiitake), sliced
- Gruyere cheese, shredded
- Garlic, minced
- Fresh thyme
- Olive oil
- Butter
- Salt
- Pepper
Instructions
- Prepare the Ingredients: Clean and slice the leeks and mushrooms. Mince the garlic and prepare the herbs.
- Cook the Pasta: Boil salted water and cook pasta until al dente. Reserve some pasta water before draining.
- Sauté the Mushrooms: Heat olive oil and butter in a skillet. Add mushrooms and sauté until golden brown, about 5-7 minutes. Season.
- Caramelize the Leeks: Add leeks to the skillet and cook until tender and caramelized, about 10 minutes. Adjust heat if necessary.
- Add the Garlic and Herbs: Stir in the minced garlic and thyme, cooking for an additional 2 minutes.
- Combine with Pasta: Add the drained pasta and reserved water to the skillet. Stir in Gruyere cheese until melted.
- Adjust the Seasoning: Taste and add more salt, pepper, or herbs as desired.
- Serve: Plate and garnish with extra cheese and thyme. Enjoy warm!
