  • 1/2 teaspoon cardamom
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine warm milk, sugar, and yeast. Let it sit for 5–7 minutes until foamy. Add melted butter, eggs, a pinch of salt, and mix well. Gradually add flour until a soft dough forms.
  2. Knead the Dough: Turn the dough onto a floured surface and knead for 5–7 minutes until smooth and elastic. Place it in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for 1 hour until it doubles in size.
  3. Make the Filling: In a separate bowl, mix brown sugar, cinnamon, cardamom, ginger, and a pinch of salt. Set aside.
  4. Roll Out the Dough: Once risen, punch down the dough and roll it into a rectangle, about 1/4 inch thick. Brush with melted butter and sprinkle the spice mixture evenly on top.
  5. Roll and Cut: Starting from one long edge, roll the dough tightly into a log. Slice into 12 equal pieces and place them in a greased baking dish.
  6. Second Rise: Cover loosely and let rise for 30–45 minutes until puffed up.
  7. Bake: Preheat the oven to 350°F (175°C). Bake rolls for 25–30 minutes, or until golden brown.
  8. Glaze: While baking, whisk together powdered sugar and milk for the glaze. Drizzle over the warm rolls after removing from the oven.
