- 8 oz fettuccine, linguine, or spaghetti
- 1 cup dry champagne or sparkling wine
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 8 oz sliced mushrooms (button, cremini, or shiitake)
- 3 cloves minced garlic
- 2 tbsp fresh parsley or basil, chopped
- 1 tbsp salted butter
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted water according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.
- In a large skillet, melt the butter over medium heat and sauté the mushrooms with a pinch of salt until golden brown, about 5-7 minutes. Add minced garlic and cook for another minute.
- Pour in the champagne, allowing it to simmer and reduce for about 3-4 minutes.
- Lower the heat and stir in the heavy cream, simmering gently for 2-3 minutes until slightly thickened. Add reserved pasta water as needed for desired consistency.
- Whisk in the grated Parmesan until melted and smooth. Adjust seasoning with salt and pepper.
- Toss in the drained pasta, ensuring it is well coated with the sauce. If dry, add more pasta water.
- Garnish with fresh herbs and extra Parmesan, then serve immediately.
Notes
This pasta dish is best served fresh but can be stored in an airtight container for up to three days. Add a splash of cream or pasta water when reheating to maintain creaminess.
