- 1 lb boneless, skinless chicken breasts or thighs
- 8 corn or flour tortillas
- 1 cup cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 2–3 fresh jalapeños, chopped
- 1 sweet onion, finely chopped
- 1/2 cup sour cream or Greek yogurt
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- 1 cup chicken or vegetable broth
- 2 cups enchilada sauce
Instructions
- Preheat your oven to 350°F (175°C). In a skillet, sauté finely chopped onions in olive oil until translucent.
- Add chicken to the skillet, seasoning with chili powder, cumin, and garlic powder. Stir until chicken is cooked through and shred with forks.
- Mix in a large bowl the shredded chicken, sautéed onions, chopped jalapeños, and half the cheese. Stir well and mix in sour cream.
- Warm tortillas slightly and spoon the chicken mixture onto each. Roll and place seam-side down in a greased baking dish.
- Pour enchilada sauce over the top and sprinkle with remaining cheese.
- Bake covered with foil for 20 minutes, then remove foil and bake for an additional 10 minutes until bubbly and golden.
- Top with fresh cilantro and a squeeze of lime juice before serving.
Notes
Feel free to use rotisserie chicken for a quicker preparation. Adjust the spice level by using less or more jalapeños as desired.
