Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 8 corn or flour tortillas
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 23 fresh jalapeños, chopped
  • 1 sweet onion, finely chopped
  • 1/2 cup sour cream or Greek yogurt
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 cup chicken or vegetable broth
  • 2 cups enchilada sauce

Instructions

  1. Preheat your oven to 350°F (175°C). In a skillet, sauté finely chopped onions in olive oil until translucent.
  2. Add chicken to the skillet, seasoning with chili powder, cumin, and garlic powder. Stir until chicken is cooked through and shred with forks.
  3. Mix in a large bowl the shredded chicken, sautéed onions, chopped jalapeños, and half the cheese. Stir well and mix in sour cream.
  4. Warm tortillas slightly and spoon the chicken mixture onto each. Roll and place seam-side down in a greased baking dish.
  5. Pour enchilada sauce over the top and sprinkle with remaining cheese.
  6. Bake covered with foil for 20 minutes, then remove foil and bake for an additional 10 minutes until bubbly and golden.
  7. Top with fresh cilantro and a squeeze of lime juice before serving.

Notes

Feel free to use rotisserie chicken for a quicker preparation. Adjust the spice level by using less or more jalapeños as desired.
