  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix the oats, flour, baking soda, and salt in a bowl.
  3. Cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract; mix until combined.
  5. Combine the dry ingredients with the creamed mixture until just combined.
  6. Fold in the blueberries carefully.
  7. Scoop rounded balls of dough onto prepared baking sheets, spacing them out.
  8. Bake for 10-12 minutes or until edges are golden brown.
  9. Cool cookies for a few minutes on the baking sheet before transferring to a wire rack.

Notes

For a thicker cookie, chill the dough for 30-60 minutes before baking. Store in an airtight container at room temperature for up to a week.
