Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Mix the oats, flour, baking soda, and salt in a bowl.
- Cream the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract; mix until combined.
- Combine the dry ingredients with the creamed mixture until just combined.
- Fold in the blueberries carefully.
- Scoop rounded balls of dough onto prepared baking sheets, spacing them out.
- Bake for 10-12 minutes or until edges are golden brown.
- Cool cookies for a few minutes on the baking sheet before transferring to a wire rack.
Notes
For a thicker cookie, chill the dough for 30-60 minutes before baking. Store in an airtight container at room temperature for up to a week.
