  • 4 cups chicken broth
  • 1 cup heavy cream (or whole milk)
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 tablespoons butter
  • 2 teaspoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 cups biscuit dough (store-bought or homemade)
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the vegetables in butter over medium heat until softened, about 5 to 7 minutes.
  3. Add the diced chicken and season with salt and pepper; cook until browned, about 5 minutes.
  4. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer for about 10 minutes.
  5. Mix in the chopped thyme and parsley.
  6. Prepare your dumplings, then drop spoonfuls into the bubbling mixture.
  7. Bake covered with foil for 20 minutes. Remove the foil and bake for an additional 15 minutes, or until dumplings are golden.
  8. Serve after allowing it to rest for a few minutes.
