- 2 cups boneless chicken breasts or thighs, diced
- 4 cups chicken broth
- 1 cup heavy cream (or whole milk)
- 1 cup chopped onions
- 1 cup chopped celery
- 1 cup chopped carrots
- 2 tablespoons butter
- 2 teaspoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- 2 cups biscuit dough (store-bought or homemade)
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté the vegetables in butter over medium heat until softened, about 5 to 7 minutes.
- Add the diced chicken and season with salt and pepper; cook until browned, about 5 minutes.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer for about 10 minutes.
- Mix in the chopped thyme and parsley.
- Prepare your dumplings, then drop spoonfuls into the bubbling mixture.
- Bake covered with foil for 20 minutes. Remove the foil and bake for an additional 15 minutes, or until dumplings are golden.
- Serve after allowing it to rest for a few minutes.
Notes
Allowing flavors to meld enhances the dish. Don’t overcrowd with dumplings.
