- 1 lb Chicken (breast or thighs)
- 1/2 cup Honey
- 2–3 Chipotle peppers in adobo sauce
- 3 cloves Garlic, minced
- 2 tbsp Olive oil
- Juice of 1 Lime
- Salt and pepper, to taste
Instructions
- Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt and pepper.
- Create the marinade by mixing honey, chopped chipotle peppers, minced garlic, and a splash of lime juice in a bowl. Add chicken and let marinate for at least 30 minutes.
- Sauté the marinated chicken in heated olive oil in a skillet over medium heat.
- Cook until the chicken is cooked through and caramelized, about 10-12 minutes, stirring frequently.
- Finish by squeezing fresh lime juice over the dish and tossing to combine.
Notes
For a vegetarian version, substitute chicken with tofu. Pair with rice, tortillas, or salad.
