Ingredients

  • 1 lb Chicken (breast or thighs)
  • 1/2 cup Honey
  • 23 Chipotle peppers in adobo sauce
  • 3 cloves Garlic, minced
  • 2 tbsp Olive oil
  • Juice of 1 Lime
  • Salt and pepper, to taste

Instructions

  1. Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt and pepper.
  2. Create the marinade by mixing honey, chopped chipotle peppers, minced garlic, and a splash of lime juice in a bowl. Add chicken and let marinate for at least 30 minutes.
  3. Sauté the marinated chicken in heated olive oil in a skillet over medium heat.
  4. Cook until the chicken is cooked through and caramelized, about 10-12 minutes, stirring frequently.
  5. Finish by squeezing fresh lime juice over the dish and tossing to combine.

Notes

For a vegetarian version, substitute chicken with tofu. Pair with rice, tortillas, or salad.
