Instructions
- Prepare the Chocolate Mousse: Melt dark chocolate with butter in a heat-proof bowl over a pot of simmering water, stirring until smooth. Allow it to cool slightly.
- Whip the Cream: In a separate bowl, whip heavy cream until soft peaks form. Gradually add sugar and continue whipping until stiff peaks form.
- Combine Eggs: In another bowl, whisk egg yolks until they are pale and creamy. Fold the cooled chocolate mixture gently into the egg yolks.
- Incorporate Whipped Cream: Gradually fold the whipped cream into the chocolate mixture. Be gentle to retain airiness.
- Prepare the Raspberry Layer: Blend fresh raspberries and sugar in a food processor until smooth. Strain to remove seeds if desired.
- Assemble the Layers: In a glass trifle dish or individual serving cups, start layering the chocolate mousse and raspberry puree. Repeat until you use all the mixtures, finishing with a layer of mousse.
- Chill: Refrigerate for at least 240 minutes or overnight to allow flavors to meld beautifully.
- Top and Serve: Before serving, top with more whipped cream and garnish with fresh raspberries for a stunning finish.
