Description

Delicious meatballs infused with cranberries, providing a perfect blend of sweet and savory flavors for the holiday season.

Ingredients

Scale
  • 1 lb ground beef or turkey
  • 1 cup breadcrumbs
  • 1 large egg
  • 1 onion, sautéed
  • 2 cloves garlic, minced
  • 2 cups fresh or frozen cranberries
  • 1/2 cup brown sugar
  • 2 tbsp soy sauce or Worcestershire sauce
  • 1/4 cup fresh herbs (parsley or thyme)

Instructions

  1. Prepare the meatball mixture: In a large bowl, combine the ground meat, breadcrumbs, sautéed onions, minced garlic, eggs, and herbs. Mix gently until just combined.
  2. Shape the meatballs: Wet your hands and form the mixture into evenly sized meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment.
  3. Brown the meatballs: Heat a skillet over medium heat with a drizzle of oil. Brown the meatballs on all sides, about 5-7 minutes, then transfer them to a baking dish.
  4. Make the sauce: In the same skillet, combine cranberries, brown sugar, soy sauce, and a splash of water. Bring to a boil until the cranberries burst and the sauce thickens.
  5. Combine and bake: Pour the cranberry sauce over the meatballs and bake in a preheated oven at 350°F for about 30 minutes, until cooked through and flavorful.
  6. Serve and enjoy: Garnish with fresh herbs before serving.
