Description

Delicious, festive meatballs infused with cranberries, herbs, and a sweet-and-sour glaze, perfect for holiday gatherings.


Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1 cup fresh cranberries
  • 1 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 small onion, finely diced
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 egg
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • For the glaze: 1 cup cranberry sauce, 1 tbsp balsamic vinegar, 1 tsp Dijon mustard

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Dice onion and garlic finely; set aside.
  3. In a skillet, heat olive oil and sauté onion and garlic for 3-4 minutes until translucent.
  4. In a large bowl, mix ground meat, sautéed onion and garlic, breadcrumbs, egg, herbs, salt, and pepper, folding in cranberries gently.
  5. Form the mixture into golf ball-sized meatballs and place on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes until browned and cooked through, reaching an internal temperature of 160°F (71°C).
  7. Prepare the glaze by combining cranberry sauce, balsamic vinegar, and Dijon mustard in a saucepan over medium heat until warmed through.
  8. Drizzle the glaze over the meatballs and serve warm on a platter.

Notes

Make sure not to overmix to keep meatballs tender. Serve with buttery mashed potatoes or roasted vegetables.
