- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup fresh cranberries
- 1 cup breadcrumbs
- 2 cloves garlic, minced
- 1 small onion, finely diced
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped
- 1 egg
- 1 tbsp olive oil
- Salt and pepper to taste
- For the glaze: 1 cup cranberry sauce, 1 tbsp balsamic vinegar, 1 tsp Dijon mustard
Instructions
- Preheat oven to 375°F (190°C).
- Dice onion and garlic finely; set aside.
- In a skillet, heat olive oil and sauté onion and garlic for 3-4 minutes until translucent.
- In a large bowl, mix ground meat, sautéed onion and garlic, breadcrumbs, egg, herbs, salt, and pepper, folding in cranberries gently.
- Form the mixture into golf ball-sized meatballs and place on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes until browned and cooked through, reaching an internal temperature of 160°F (71°C).
- Prepare the glaze by combining cranberry sauce, balsamic vinegar, and Dijon mustard in a saucepan over medium heat until warmed through.
- Drizzle the glaze over the meatballs and serve warm on a platter.
Notes
Make sure not to overmix to keep meatballs tender. Serve with buttery mashed potatoes or roasted vegetables.
