Description

Delicious and buttery Christmas Shortbread Cookies that are perfect for holiday gatherings and gifting.

Ingredients

Scale
  • 1 cup unsalted butter
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • Optional: zest of orange or lemon, 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat the unsalted butter and sugar together in a large bowl until it’s pale and fluffy.
  3. Gradually sift in the all-purpose flour and cornstarch, mixing gently to combine.
  4. Add any optional flavorings like vanilla extract or citrus zest.
  5. Remove the dough from the bowl and shape it into a disc. Wrap in plastic and chill in the fridge for at least 30 minutes.
  6. Roll out the chilled dough on a floured surface to about ½ inch thickness and cut out shapes using cookie cutters.
  7. Bake for 10 to 12 minutes, until edges start to turn golden.
  8. Allow cooling completely before dusting with powdered sugar or decorating.

Notes

Use room temperature butter for best results and avoid over-mixing to keep cookies tender.
