- 1 cup granulated sugar (or brown sugar)
- ½ cup unsalted butter, softened
- 2 large eggs (or aquafaba for vegan)
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup whole milk (or almond/oat milk)
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- Green frosting (buttercream or cream cheese)
- Festive candies for decoration
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with festive cupcake liners.
- In a bowl, mix the dry ingredients: Combine flour, baking powder, and salt in one bowl.
- Cream the butter and sugar: Beat softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Then, mix in the vanilla and almond extracts.
- Alternate adding dry ingredients and milk: Start with the dry mix, add half, then half of the milk, mixing until just combined. Repeat for remaining ingredients.
- Scoop batter into liners, filling each about two-thirds full.
- Bake for 18–20 minutes or until a toothpick comes out clean.
- Cool completely before frosting with green buttercream and decorating as desired.
Notes
Add chocolate chips or crushed peppermint candies for an extra layer of flavor.
