Ingredients

  • ½ cup unsalted butter, softened

  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup whole milk (or almond/oat milk)
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • Green frosting (buttercream or cream cheese)
  • Festive candies for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with festive cupcake liners.
  2. In a bowl, mix the dry ingredients: Combine flour, baking powder, and salt in one bowl.
  3. Cream the butter and sugar: Beat softened butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Then, mix in the vanilla and almond extracts.
  5. Alternate adding dry ingredients and milk: Start with the dry mix, add half, then half of the milk, mixing until just combined. Repeat for remaining ingredients.
  6. Scoop batter into liners, filling each about two-thirds full.
  7. Bake for 18–20 minutes or until a toothpick comes out clean.
  8. Cool completely before frosting with green buttercream and decorating as desired.

Notes

Add chocolate chips or crushed peppermint candies for an extra layer of flavor.
