  • ½ cup milk
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • ½ tsp peppermint extract
  • ½ cup heavy cream for ganache
  • 1 cup chocolate ganache

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 13×18-inch baking sheet with parchment paper.
  3. Mix together flour, cocoa powder, baking powder, and salt in a bowl.
  4. Cream butter and sugar until fluffy.
  5. Add eggs one at a time, followed by vanilla.
  6. Combine dry ingredients with wet mixture, alternating with milk.
  7. Pour batter into the baking sheet and spread evenly.
  8. Bake for 12-15 minutes.
  9. Cool for 5 minutes in the pan, then roll in a kitchen towel.
  10. Whip heavy cream with powdered sugar and peppermint extract.
  11. Unroll the cake, spread frosting, and roll back up.
  12. Warm cream, mix with ganache, and drizzle over the cake.
  13. Chill in the refrigerator for at least 1 hour before serving.

Notes

For dairy-free, substitute coconut oil for butter. Use almond extract for a nutty flavor.
