- 1 cup heavy cream
- 1 cup powdered sugar
- ½ tsp peppermint extract
- ½ cup heavy cream for ganache
- 1 cup chocolate ganache
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 13×18-inch baking sheet with parchment paper.
- Mix together flour, cocoa powder, baking powder, and salt in a bowl.
- Cream butter and sugar until fluffy.
- Add eggs one at a time, followed by vanilla.
- Combine dry ingredients with wet mixture, alternating with milk.
- Pour batter into the baking sheet and spread evenly.
- Bake for 12-15 minutes.
- Cool for 5 minutes in the pan, then roll in a kitchen towel.
- Whip heavy cream with powdered sugar and peppermint extract.
- Unroll the cake, spread frosting, and roll back up.
- Warm cream, mix with ganache, and drizzle over the cake.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
For dairy-free, substitute coconut oil for butter. Use almond extract for a nutty flavor.
