Instructions
- Preheat your oven to 325°F (163°C).
- Make the crust: Crush the graham crackers finely, mix with melted butter and sugar. Press into the bottom of a springform pan and bake for 10 minutes.
- Prepare the filling: Beat cream cheese until smooth, add sugar and mix until combined. Then, add sour cream and vanilla extract, mixing until smooth.
- Incorporate the eggs one at a time, mixing just enough to combine each addition.
- Pour the filling over the cooled crust, tapping the pan to release air bubbles.
- Bake for 50-60 minutes until the center jiggles slightly.
- Cool gradually in the oven with the door ajar for 1 hour.
- Refrigerate overnight before serving.
- Serve with fresh fruit or chocolate sauce.
