- 1 lb boneless chicken (breast or thighs)
- 8 oz cremini or shiitake mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 2 teaspoons fresh thyme or rosemary
- 1/2 cup cream or coconut milk
- Salt and pepper to taste
Instructions
- Prep your ingredients: Chop onion and garlic finely, and slice mushrooms.
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sautéing until translucent.
- Add sliced mushrooms and caramelize for 5-7 minutes.
- Season chicken with salt and pepper, then add to the pot and brown on all sides.
- Pour in the broth and bring to a gentle simmer. Add fresh herbs.
- After 20 minutes, remove chicken, shred it, and return to the pot. Stir in cream or coconut milk.
- Adjust seasoning before serving hot, garnished with chopped herbs.
