  • 2 teaspoons fresh thyme or rosemary
  • 1/2 cup cream or coconut milk
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Chop onion and garlic finely, and slice mushrooms.
  2. In a large pot, heat olive oil over medium heat. Add onion and garlic, sautéing until translucent.
  3. Add sliced mushrooms and caramelize for 5-7 minutes.
  4. Season chicken with salt and pepper, then add to the pot and brown on all sides.
  5. Pour in the broth and bring to a gentle simmer. Add fresh herbs.
  6. After 20 minutes, remove chicken, shred it, and return to the pot. Stir in cream or coconut milk.
  7. Adjust seasoning before serving hot, garnished with chopped herbs.
