Ingredients

  • 1 lb chicken thighs
  • 2 cups cremini mushrooms, sliced
  • 2 cups shiitake mushrooms, sliced
  • 3 cloves garlic, minced
  • 4 cups chicken stock
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 tsp fresh thyme
  • 2 bay leaves
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, for sautéing
  • Optional: 1/2 cup heavy cream or sour cream

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add diced onions, carrots, and celery, cooking until softened, about 5-7 minutes. Add minced garlic and sauté for another minute.
  2. Brown the chicken: Push the vegetables to the side of the pot and add chicken pieces, seasoning with salt and pepper. Brown each side for about 3-4 minutes.
  3. Add the mushrooms: Incorporate sliced mushrooms into the pot, sautéing with the chicken and vegetables.
  4. Pour in the broth: Carefully add chicken broth and bring to a gentle boil.
  5. Season and simmer: Add thyme and bay leaves, reduce heat to low, cover and simmer for about 20-25 minutes.
  6. Shred the chicken: Remove the chicken, shred it, and return it to the pot.
  7. Final touches: Taste, adjust seasoning, and if desired, stir in a splash of cream. Serve hot, garnished with herbs.
