- 1 lb chicken thighs
- 2 cups cremini mushrooms, sliced
- 2 cups shiitake mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups chicken stock
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tsp fresh thyme
- 2 bay leaves
- Salt, to taste
- Black pepper, to taste
- Olive oil, for sautéing
- Optional: 1/2 cup heavy cream or sour cream
Instructions
- Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add diced onions, carrots, and celery, cooking until softened, about 5-7 minutes. Add minced garlic and sauté for another minute.
- Brown the chicken: Push the vegetables to the side of the pot and add chicken pieces, seasoning with salt and pepper. Brown each side for about 3-4 minutes.
- Add the mushrooms: Incorporate sliced mushrooms into the pot, sautéing with the chicken and vegetables.
- Pour in the broth: Carefully add chicken broth and bring to a gentle boil.
- Season and simmer: Add thyme and bay leaves, reduce heat to low, cover and simmer for about 20-25 minutes.
- Shred the chicken: Remove the chicken, shred it, and return it to the pot.
- Final touches: Taste, adjust seasoning, and if desired, stir in a splash of cream. Serve hot, garnished with herbs.
