Ingredients

  • 2 lbs Boneless, skinless chicken thighs or breasts
  • 1 packet Gravy mix or homemade gravy base
  • 2 cloves Fresh garlic, minced
  • 1 medium Onion, chopped
  • 2 cups Chicken broth or stock
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 1 tsp Dried thyme
  • 1 tsp Dried parsley
  • Optional: Mixed vegetables (carrots, celery, mushrooms)

Instructions

  1. Season chicken with salt, pepper, and any desired spices. Sear in a skillet until golden brown, then transfer to the crockpot.
  2. Sauté onions and garlic in the same skillet for 2-3 minutes until fragrant.
  3. If making homemade gravy, whisk together flour and chicken broth until smooth, then pour over chicken and sautéed vegetables.
  4. Add enough chicken broth to cover the chicken halfway.
  5. Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours.
  6. 30 minutes before serving, check gravy thickness; if too thin, whisk cornstarch with water and stir into the gravy until thickened.
  7. Garnish with fresh parsley or thyme before serving.

Notes

Use bone-in chicken for extra flavor. Feel free to add your favorite vegetables for added nutrition.
