Ingredients

- 2 lbs Boneless, skinless chicken thighs or breasts
- 1 packet Gravy mix or homemade gravy base
- 2 cloves Fresh garlic, minced
- 1 medium Onion, chopped
- 2 cups Chicken broth or stock
- 1 tsp Black pepper
- 1 tsp Salt
- 1 tsp Dried thyme
- 1 tsp Dried parsley
- Optional: Mixed vegetables (carrots, celery, mushrooms)
Instructions
- Season chicken with salt, pepper, and any desired spices. Sear in a skillet until golden brown, then transfer to the crockpot.
- Sauté onions and garlic in the same skillet for 2-3 minutes until fragrant.
- If making homemade gravy, whisk together flour and chicken broth until smooth, then pour over chicken and sautéed vegetables.
- Add enough chicken broth to cover the chicken halfway.
- Cover the crockpot and set it on low for 6-8 hours or high for 3-4 hours.
- 30 minutes before serving, check gravy thickness; if too thin, whisk cornstarch with water and stir into the gravy until thickened.
- Garnish with fresh parsley or thyme before serving.
Notes
Use bone-in chicken for extra flavor. Feel free to add your favorite vegetables for added nutrition.
