- 1 cup cottage cheese
- 1/2 cup maple syrup or honey
- 1 tablespoon baking powder
- 2 large eggs
- 1/2 cup milk (dairy or plant-based)
- 1 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners or lightly grease it.
- Combine the rolled oats, cottage cheese, milk, eggs, maple syrup, and cinnamon in a blender. Blend on high until smooth, about 30 seconds.
- Add the baking powder and blitz for just a few seconds to incorporate.
- Pour the batter into the prepared muffin pan, filling each cup about ¾ full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Cool the muffins in the pan for a few minutes before transferring them to a wire rack to cool completely.
Notes
For extra moisture, consider adding a dollop of yogurt or applesauce. Experiment with add-ins like fruits or nuts for variety.
