Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners or lightly grease it.
  2. Combine the rolled oats, cottage cheese, milk, eggs, maple syrup, and cinnamon in a blender. Blend on high until smooth, about 30 seconds.
  3. Add the baking powder and blitz for just a few seconds to incorporate.
  4. Pour the batter into the prepared muffin pan, filling each cup about ¾ full.
  5. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  6. Cool the muffins in the pan for a few minutes before transferring them to a wire rack to cool completely.
