Ingredients

  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 23 cups diced apples (mix of Granny Smith and Honeycrisp)
  • 1 tablespoon brown sugar (optional, for topping)

Instructions

  1. Preheat your oven to 350°F and grease a loaf pan.
  2. Prepare the apples by peeling and dicing.
  3. In a large bowl, combine flour, sugar, baking powder, cinnamon, and nutmeg.
  4. In another bowl, whisk together the eggs, melted butter, and vanilla.
  5. Pour the wet ingredients into the dry and stir until just combined.
  6. Fold in the diced apples.
  7. Pour the batter into the loaf pan and optionally sprinkle brown sugar on top.
  8. Bake for 45-55 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

For a vegan option, substitute eggs with flaxseed meal and use coconut oil instead of butter. Make sure to use firm apples for the best results.
