Ingredients

- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 eggs
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 2–3 cups diced apples (mix of Granny Smith and Honeycrisp)
- 1 tablespoon brown sugar (optional, for topping)
Instructions
- Preheat your oven to 350°F and grease a loaf pan.
- Prepare the apples by peeling and dicing.
- In a large bowl, combine flour, sugar, baking powder, cinnamon, and nutmeg.
- In another bowl, whisk together the eggs, melted butter, and vanilla.
- Pour the wet ingredients into the dry and stir until just combined.
- Fold in the diced apples.
- Pour the batter into the loaf pan and optionally sprinkle brown sugar on top.
- Bake for 45-55 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For a vegan option, substitute eggs with flaxseed meal and use coconut oil instead of butter. Make sure to use firm apples for the best results.
