Description

Ingredients

  • 1 lb ground beef or turkey
  • 1 cup corn
  • 1 can diced tomatoes
  • 1 green bell pepper, diced
  • 2 carrots, shredded
  • 1 can kidney beans or black beans
  • 4 cups beef or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 tsp cumin
  • 1 tsp thyme
  • 1 tsp oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat, using a wooden spoon to break it apart as it cooks. Drain any excess fat.
  2. Add chopped onions and minced garlic to the pot. Sauté for about 3-4 minutes until the onions are translucent and fragrant.
  3. Introduce diced bell peppers, shredded carrots, and mushrooms. Sauté for about 5 minutes until softened.
  4. Stir in canned tomatoes (with juices) and broth and bring the mixture to a gentle boil.
  5. Add corn and beans, stirring to combine. Continue to simmer for about 20 minutes.
  6. Season with salt, pepper, dried herbs, and adjust spices to taste.
  7. Serve hot, garnished with fresh cilantro or sour cream if desired.
