- 1 lb ground beef or turkey
- 1 cup corn
- 1 can diced tomatoes
- 1 green bell pepper, diced
- 2 carrots, shredded
- 1 can kidney beans or black beans
- 4 cups beef or vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 tsp cumin
- 1 tsp thyme
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium heat, using a wooden spoon to break it apart as it cooks. Drain any excess fat.
- Add chopped onions and minced garlic to the pot. Sauté for about 3-4 minutes until the onions are translucent and fragrant.
- Introduce diced bell peppers, shredded carrots, and mushrooms. Sauté for about 5 minutes until softened.
- Stir in canned tomatoes (with juices) and broth and bring the mixture to a gentle boil.
- Add corn and beans, stirring to combine. Continue to simmer for about 20 minutes.
- Season with salt, pepper, dried herbs, and adjust spices to taste.
- Serve hot, garnished with fresh cilantro or sour cream if desired.
