- 1 cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 cups all-purpose flour
- ¾ cup dried cranberries
- 1 tablespoon orange zest
- ½ orange, juiced
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter and sugar until light and fluffy.
- Add in the orange zest, juice, and vanilla extract; stir until combined.
- Fold in the flour gradually until dough comes together.
- Add the dried cranberries and fold gently.
- Turn the dough onto a floured surface and shape into a log; chill for at least an hour.
- Slice the chilled dough into ½-inch rounds and place on the prepared baking sheet.
- Bake for 12-15 minutes or until lightly golden around the edges.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack.
- Enjoy! Optionally sprinkle powdered sugar on top before serving.

For a gluten-free version, substitute the all-purpose flour with a gluten-free blend.
