Ingredients

  • ¾ cup granulated sugar
  • 2 cups all-purpose flour
  • ¾ cup dried cranberries
  • 1 tablespoon orange zest
  • ½ orange, juiced
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add in the orange zest, juice, and vanilla extract; stir until combined.
  4. Fold in the flour gradually until dough comes together.
  5. Add the dried cranberries and fold gently.
  6. Turn the dough onto a floured surface and shape into a log; chill for at least an hour.
  7. Slice the chilled dough into ½-inch rounds and place on the prepared baking sheet.
  8. Bake for 12-15 minutes or until lightly golden around the edges.
  9. Cool on the baking sheet for a few minutes, then transfer to a wire rack.
  10. Enjoy! Optionally sprinkle powdered sugar on top before serving.
