- 1 lb Boneless Chicken (breast or thighs)
- 1 cup Orzo Pasta
- 8 oz Fresh Mushrooms (cremini preferred)
- 1 cup Bell Peppers (diced)
- 3 cloves Garlic (minced)
- 1 cup Cheese (mozzarella and Parmesan blend)
- 2 cups Chicken or Vegetable Broth
- 1 tbsp Olive Oil
- Salt and Pepper to taste
- Optional: Fresh herbs (for garnish)
Instructions
- Prepare the Chicken: Season chicken with salt, pepper, and garlic powder. Heat a skillet over medium-high heat, add olive oil, and brown the chicken for 4-5 minutes on each side. Remove and set aside.
- Sauté the Vegetables: In the same skillet, add more oil if necessary, then add minced garlic and chopped mushrooms. Sauté for 3 minutes until fragrant, then add diced bell peppers and cook for another 4-5 minutes.
- Cook the Orzo: Stir in the orzo pasta and pour in broth. Bring to a boil, reduce heat, cover, and simmer for 10-12 minutes, stirring occasionally.
- Combine and Add Chicken: Return chicken to the pan, nestling it in the orzo. Sprinkle cheese on top, cover, and melt for an additional 5 minutes.
- Serve: Serve hot, garnished with fresh herbs if desired.
Notes
Use a large skillet for even cooking. Adjust seasoning and consider adding a squeeze of lemon juice before serving for added brightness.
