- 4 boneless chicken breasts
- 8 oz Brie cheese, diced
- 1 cup fresh cranberries
- 1 cup fresh spinach (optional)
- 2 tablespoons fresh thyme or rosemary (or adjust for dried)
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 tablespoons butter, melted (or olive oil)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Trim excess fat from the chicken and slice a pocket into each breast.
- Melt butter in a skillet over medium heat. Add garlic and sauté until fragrant. Toss in spinach until wilted, then remove from heat. Mix in cranberries and Brie, seasoning with herbs, salt, and pepper.
- Stuff each chicken breast pocket with the filling. Secure with toothpicks.
- Mix breadcrumbs with melted butter, sprinkle with garlic powder and season. Coat the stuffed chicken with the breadcrumb mixture.
- Place the chicken in a greased baking dish and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- Rest the chicken for 5-10 minutes before slicing.
