Ingredients

  • 2 cups fresh cranberries
  • 3 large eggs
  • 1 cup granulated sugar
  • 2 cups heavy cream
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter
  • Pinch of salt
  • Ice water, as needed

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine 1 ½ cups of flour with ½ cup of unsalted butter, and a pinch of salt in a mixing bowl. Use a pastry cutter or fork until resembling coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough forms. Roll it out and place it in a pie dish, trimming any excess.
  3. Whisk together 3 large eggs, 1 cup of granulated sugar, 2 cups of heavy cream, 1 teaspoon of vanilla extract, and ½ teaspoon of cinnamon until smooth.
  4. Fold in 2 cups of fresh cranberries until evenly distributed.
  5. Pour the cranberry mixture into the prepared crust, ensuring it’s evenly spread.
  6. Bake for 40-45 minutes until the custard is set but slightly jiggly in the center.
  7. Cool at room temperature for about 2 hours before slicing.

Notes

For a deeper flavor, sauté cranberries briefly before adding them to the filling. Serve with whipped cream or vanilla ice cream.
