Description

Delicious scones combining tart cranberries and spicy jalapeños for a unique flavor experience.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ cup unsalted butter, chilled
  • ½ cup buttermilk
  • 1 egg
  • 12 jalapeños, finely chopped
  • 1 cup fresh cranberries
  • ½ cup sharp cheddar cheese, grated
  • Fresh herbs (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Cut in the chilled butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, mix the buttermilk, egg, and chopped jalapeños.
  5. Add the wet ingredients to the flour mixture and gently stir to combine without overmixing.
  6. Fold in the cranberries and cheese.
  7. Turn the dough onto a floured surface, shape into a disc, and cut into triangles or rounds.
  8. Place on the baking sheet, brush with buttermilk, and sprinkle with sea salt.
  9. Bake for 15-20 minutes until golden brown.
  10. Cool slightly before serving.

Notes

For a vegan version, substitute coconut oil for butter and plant-based milk for buttermilk. Store leftovers in an airtight container at room temperature or freeze for later use.
