- 1 ½ cups fresh cranberries
- ¾ cup sugar
- 2 tablespoons lemon juice
- 8 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs, melted butter, and sugar in a bowl.
- Press the mixture into the bottom and sides of a pie dish. Bake for about 10 minutes until golden. Allow to cool.
- In a saucepan, combine fresh cranberries, sugar, and a splash of water. Cook over medium heat until cranberries burst and thicken, about 10 minutes. Cool slightly.
- Beat together cream cheese and lemon juice in a separate bowl until smooth.
- Whip the heavy cream until stiff peaks form in another bowl, then gently fold it into the cream cheese mixture.
- Fold in the cranberry compote until just combined.
- Pour the mousse into the cooled crust, smoothing the top. Chill in the refrigerator for at least 4 hours or overnight.
- Garnish with extra cranberries or whipped cream before serving.
Notes
Allow enough chilling time for the mousse to set. Be patient while cooking the cranberries to achieve a perfect compote.
