A delightful dessert that balances the sweet and tart flavors of fresh cranberries within a creamy mousse atop a buttery graham cracker crust.


Ingredients

  • 1 ½ cups fresh cranberries
  • ¾ cup sugar
  • 2 tablespoons lemon juice
  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, melted butter, and sugar in a bowl.
  3. Press the mixture into the bottom and sides of a pie dish. Bake for about 10 minutes until golden. Allow to cool.
  4. In a saucepan, combine fresh cranberries, sugar, and a splash of water. Cook over medium heat until cranberries burst and thicken, about 10 minutes. Cool slightly.
  5. Beat together cream cheese and lemon juice in a separate bowl until smooth.
  6. Whip the heavy cream until stiff peaks form in another bowl, then gently fold it into the cream cheese mixture.
  7. Fold in the cranberry compote until just combined.
  8. Pour the mousse into the cooled crust, smoothing the top. Chill in the refrigerator for at least 4 hours or overnight.
  9. Garnish with extra cranberries or whipped cream before serving.

Notes

Allow enough chilling time for the mousse to set. Be patient while cooking the cranberries to achieve a perfect compote.
