Ingredients

  • 1 cup olive oil
  • 1 cup sugar
  • 1 large orange (zest and juice)
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 ½ cups fresh cranberries (or frozen)
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with olive oil or line it with parchment paper.
  3. Combine in a bowl, 2 cups of flour, 1 teaspoon of baking powder, and a pinch of salt.
  4. Whisk together 1 cup of olive oil and 1 cup of sugar in another bowl.
  5. Add the zest and juice of the orange, followed by 3 eggs, mixing until fully incorporated.
  6. Mix the dry ingredients into the wet ingredients until just combined.
  7. Fold in 1 ½ cups of cranberries gently.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
