- 1 cup olive oil
- 1 cup sugar
- 1 large orange (zest and juice)
- 3 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 ½ cups fresh cranberries (or frozen)
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9-inch round cake pan with olive oil or line it with parchment paper.
- Combine in a bowl, 2 cups of flour, 1 teaspoon of baking powder, and a pinch of salt.
- Whisk together 1 cup of olive oil and 1 cup of sugar in another bowl.
- Add the zest and juice of the orange, followed by 3 eggs, mixing until fully incorporated.
- Mix the dry ingredients into the wet ingredients until just combined.
- Fold in 1 ½ cups of cranberries gently.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
