A comforting bowl of Creamy Alfredo Lasagna Soup that combines the rich flavors of classic lasagna into a cozy soup.


Ingredients

  • Lasagna noodles, broken into pieces
  • 2 cups heavy cream
  • 2 tablespoons butter
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces cremini or button mushrooms, sliced
  • 4 cups chicken or vegetable broth
  • 1 cup freshly grated Parmesan cheese
  • Fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat and melt the butter.
  2. Sauté the chopped onion until it turns translucent, then add minced garlic until golden.
  3. Toss in the sliced mushrooms and cook until tender.
  4. Sprinkle in flour to create a roux and whisk for about a minute.
  5. Gradually add in the chicken or vegetable broth, stirring until no lumps remain.
  6. Pour in the heavy cream and bring to a gentle simmer.
  7. Add the broken lasagna noodles and cook until tender, about 10 minutes.
  8. Just before serving, stir in freshly grated parmesan and chopped basil.
  9. Season with salt and pepper to taste.

Notes

For a lighter version, use half-and-half instead of heavy cream. You can also make a vegan version by substituting coconut milk for heavy cream and using cashew cheese.
