- Lasagna noodles, broken into pieces
- 2 cups heavy cream
- 2 tablespoons butter
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 8 ounces cremini or button mushrooms, sliced
- 4 cups chicken or vegetable broth
- 1 cup freshly grated Parmesan cheese
- Fresh basil, chopped
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat and melt the butter.
- Sauté the chopped onion until it turns translucent, then add minced garlic until golden.
- Toss in the sliced mushrooms and cook until tender.
- Sprinkle in flour to create a roux and whisk for about a minute.
- Gradually add in the chicken or vegetable broth, stirring until no lumps remain.
- Pour in the heavy cream and bring to a gentle simmer.
- Add the broken lasagna noodles and cook until tender, about 10 minutes.
- Just before serving, stir in freshly grated parmesan and chopped basil.
- Season with salt and pepper to taste.
Notes
For a lighter version, use half-and-half instead of heavy cream. You can also make a vegan version by substituting coconut milk for heavy cream and using cashew cheese.
