- 4 Corn tortillas, sliced into strips
- Olive oil, for sautéing
- Lime juice, to taste
Instructions
- Sauté the vegetables: In a large pot, heat a tablespoon of olive oil over medium heat. Add diced onions, peppers, and minced garlic, sautéing until they’re soft and fragrant—about 5-7 minutes.
- Add the chicken: Stir in the chicken pieces, allowing them to brown lightly.
- Introduce broth and tomatoes: Pour in the chicken broth and add canned diced tomatoes along with all the juices. Bring everything to a gentle simmer for about 15 minutes.
- Make it creamy: Lower the heat and stir in the cream or milk, letting it simmer just until heated through. Avoid boiling.
- Season to taste: Sprinkle in cumin, chili powder, and salt. Adjust according to your taste.
- Finish with freshness: Stir in chopped cilantro and a squeeze of fresh lime juice before serving.
- Prepare the tortilla strips: Slice corn tortillas into strips and lightly fry them until golden and crispy in a dash of oil.
- Serve: Ladle the soup into bowls, top with tortilla strips, and enjoy!
