- 1 lb shrimp, peeled and deveined
- 2 tbsp butter
- 2 cups heavy cream
- 4 cups seafood or fish broth (or vegetable broth)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 shallots, diced
- 1 tsp fresh thyme
- 1/4 cup fresh parsley, chopped
- 1/2 cup dry white wine
- Salt and pepper to taste
- Cajun seasoning (optional)
Instructions
- Sauté the Aromatics: In a large pot, melt butter over medium heat. Add diced onions, garlic, and shallots, and sauté until they are translucent and fragrant, about 5 minutes. Stir in a pinch of salt to help soften them.
- Add the Broth and Wine: Pour in the seafood broth and white wine. Bring it to a gentle simmer while scraping up any bits from the pot.
- Incorporate the Shrimp: Gently add the shrimp, cooking until they are pink and opaque, which should take about 3-5 minutes.
- Stir in the Crab: Lower the heat and fold in the crab meat slowly, letting it warm in the broth.
- Add Cream and Herbs: Pour in the heavy cream and sprinkle in fresh thyme and chopped parsley. Simmer gently for an additional 5-10 minutes.
- Season: Taste the bisque and adjust the seasoning with salt, black pepper, and Cajun seasoning if desired.
- Serve and Enjoy: Ladle into bowls, garnish with more fresh herbs, and serve hot with crusty bread.
