Ingredients

  • Chicken (breast or thighs)
  • Heavy cream
  • Fresh garlic
  • Cremini or button mushrooms
  • Fresh baby spinach
  • Sun-dried tomatoes
  • Low-sodium chicken broth
  • Italian seasoning
  • Olive oil
  • Butter

Instructions

  1. Heat a large skillet over medium heat with a tablespoon of olive oil and a pat of butter. Season the chicken with salt and pepper and cook until browned on both sides, approximately 6 to 7 minutes per side. Ensure it’s cooked through; then transfer it to a plate.
  2. In the same skillet, reduce heat to medium-low and add more butter if needed. Toss in minced garlic and let it sizzle for about 30 seconds before adding the sliced mushrooms. Sauté until mushrooms soften and begin to brown.
  3. Pour in the chicken broth and let it reduce slightly for about a minute. Then, add heavy cream, sun-dried tomatoes, and Italian seasoning. Bring to a gentle simmer.
  4. Return the chicken to the skillet and spoon the sauce over it. Add fresh spinach and cook until it wilts. Taste and adjust seasoning if necessary.
  5. Serve hot, garnishing with freshly grated Parmesan or herbs if desired.
